Because the Stellenrust Barrel-fermented Chardonnay is just so delicious! The nose reveals ripe citrus fruit with some toasted almond. The taste is more concentrated with stronger nutty aromas, some peach notes, but also a persistent mineral finish. Well-judged oak usage provides a touch of butterscotch. Nice, zesty acidity. The grapes for the Stellenrust Barrel-Fermented Chardonnay are crushed, and the juice is allowed to remain in contact with the skins for up to 8 hours without the addition of sulfur. The hyperoxygenated juice is then transferred to barrels without proper settling and allowed to ferment with wild yeasts. Fermentation can last up to 3 months, and the wine is stirred frequently to lift the lees after fermentation is complete.
