Domaine La Colombette located on the sunny hillsides overlooking the valley of a small coastal river Libron. Winemaking is the most “traditional” thing Pugibet family do. First at dawn picking by machine at a very good maturity. Then, as quickly as possible, direct pressing with a pneumatic press and settling for 24 hours. Finally, a thermo-regulated fermentation between 11 and 18°C followed by aging on the lees until bottling at the end of December.
The result surprises with its aromatic power.
