The Pugibet family, pioneer in Languedoc practices modern and creative winemaking. Grenache and Syrah are the pillars of the southern vineyards. At La Colombette, Syrah occupies the top of the hillsides on what we call the Villafranchian ridges. These are very acidic clayey gravel soils.
Syrah is very well suited to this and produces nervous and concentrated wines. The middle part of the hillsides is made up of white marls from the Miocene.
In these limestone soils, the Grenaches acquire the right maturity necessary for their expressions. The marriage of these two grape varieties offers a summary of the estate’s terroirs.
FOOD & WINE PAIRING: It goes perfectly with red and white meats. It also goes well with gratins and most pasta dishes. A little fresh, it is suitable for certain fish like tuna.
The perfect pairing: grilled sausage on vine branches and a tomato salad on a beautiful summer evening. For the occasion, serve it a little chilled.
