Partly aged in new barrels. Frequent batonnage of the lees. Selection of the best barrels in the blend. This wine is made from a single 0.5 hectare plot, an exceptional terroir, which is located next to Château de Gallifet, in the town of Cairanne.
Clay-limestone soil, with low yields. Perfectly suited to the production of rich and complex white wines.
Food Pairing: It goes perfectly with chicken with lobster bisque, a spiced chicken tagine or a farmhouse Saint Nectaire.
